Whether made with porridge, granola or muesli, we think muffins are a great breakfast option when you're in a hurry. That's why we're presenting six different breakfast muffin ideas today. From sweet to savoury, there's something for everyone here 😉

1. Baked porridge from a muffin tin
We already introduced you to ‘baked porridge’ in our 2019 porridge trends. Baked porridge can easily be turned into a to-go version in the form of muffins. To make baked porridge from a muffin tin, mix 100 grams of your favourite porridge base with 2 eggs (or egg substitute), 2 teaspoons of baking powder, 100 ml of milk of your choice, 2 tablespoons of nut butter, fruit and a sweetener of your choice, then bake the muffins for about 25 minutes at 180 degrees.
If you like it fruity, our organic strawberry chia porridge is perfect for this. For those who prefer a savoury breakfast, the baked porridge from the muffin tin can also be made with our spicy pumpkin and tomato porridge.
2. Filled puff pastry parcels from the muffin tin
Another easy breakfast idea can be made by turning the muffin tin (or silicone muffin moulds) upside down. This allows you to easily make puff pastry shells. All you need is some puff pastry, which you cut into square pieces and place over the muffin tray indentations to form small shells.
Bake the puff pastry in your oven according to the instructions on the packet. There are no limits to what you can put in the puff pastry cups! For example, you can fill them with yoghurt, berries and your favourite granola or porridge. The best thing about this recipe? You can eat the bowl for breakfast too.
3. Oatmeal cups
Delicious breakfast bowls can also be made very easily from oatmeal. To make the oatmeal cups, first mash two ripe bananas and then add about 100g of honey. Next, stir in 125g of oatmeal and 1 teaspoon of cinnamon and mix everything together well.
Spoon 2 tablespoons of the mixture into each muffin case and press down firmly with your fingers to form a hollow in the centre. Bake the oat cups in the oven at 175°C for 10-12 minutes. Once they are ready, remove them from the tin and fill them as desired. For example, you can fill them with yoghurt and berries or with a little yoghurt and crunchy topping.
4. Savoury porridge muffins with spinach and feta
If you like a hearty breakfast, we recommend spinach and feta muffins with porridge. For this muffin variation, you will need about 300g spinach, 200g feta, 100g oats or a savoury porridge of your choice, 150g flour, 2 teaspoons baking powder, 2 eggs, 60ml olive oil, 250ml milk or plant-based milk and a little salt and pepper.
First, defrost the spinach and remove any excess liquid. Then mix the spinach with the eggs, olive oil and milk and season with salt and pepper. Next, mix all the dry ingredients and combine with the wet ingredients. Finally, carefully fold the feta cubes into the muffin batter. Bake the muffins in the oven at 200 degrees for 15 minutes.
5. Good morning muesli muffins
Our good morning muffins are the perfect way to start the day. With porridge as the main ingredient, these muffins are a delicious alternative to your usual porridge. They are easy to prepare at the weekend and taste great too.
6. Crumble with a twist – the crumble muffin
If you fancy a delicious crumble for breakfast, you can easily make it in small portions in a muffin tin. You can find a recipe for apricot crumble here. You can easily adapt the recipe by pouring the mixture into small muffin cases. This way, you can enjoy the crumble for breakfast too.
